Winemaking:
The contact of the skins with must in the fermentation process, developed to controlled temperature, takes place with not very intense but constant repairs to extract the noblest tannins compounds. Its period of rising takes place in barrels of American oak during a period of no inferior time to one year, continuing with a suitable maturation in bottle. The cycle of complete aging usually lasts of 3 to 4 years.
Tasting notes:
Cherry clean and intense ruby colour, with borders roofing tiles. In nose deep and fresh, long and heterogenous with marks of vanilla, red spices and fruits; whereas in mouth he is round, emphasizing the vegetal tones and liquorice.
Recommendations:
It combines wonderfully with grilled meats, birds, with good cheese manchego, etc. Its ideal temperature of consumption is from 16 to 17º C; whereas the maximum time of conservation in bottles in optimal circumstances can oscillate between six and eight years.
